I bumped up the temp to 400 about 40 min in because I realized the potatoes weren’t cooking. Total cooking time was extended to 1 hr 20 min and the potatoes were just barely cooked through. Next time I’ll try 400 degrees from the start or parboil the potatoes first but it was SO YUMMY!
