I did not have the patience to grate cauliflower. I tested small batches in my vitamix (the smallest container, I used to make single serving baby food). It worked pretty well. But I also grew impatient with that and put it all in my larger container and used a baton to mush it down. Some was overly mushy and I still had some larger chuncks. I just re-ran those chucks in my smaller one. Probably took longer than just grating it....
Some patties were too think with too much sauce. My husband said it was fine, just ate it like lasagna. It seemed to be easier to handle if I squeezed out any liquid and flattened it as thin as I could. I also turned the oven on high for 2 minutes after the 20 minutes. The edges burnt a little, but I don't really want to eat pizza with a fork.
