Lighter in texture, less spice heavy, and less sweet than other carrot cake recipes I've tried. Very nice. I used a whipped cream cream cheese frosting to cut down on the sweetness and to allow for the cake to be eaten straight from the refrigerator - the whipped cream cream cream cheese frosting doesn't get hard when cold.
