One of my all time favorite breakfast dishes. Easiest recipe in this cookbook, and always comes out great. I've made it with fresh hashbrowns (instead of frozen) which take a bit more work, but am looking forward to trying it with Idaho Spuds re-hydrated potatoes.
One key thing with this casserole: MAKE SURE YOUR HASHBROWNS ARE WELL DRAINED AND NOT WET. This effects the final texture quite a bit.
This is also really delicious with turkey bacon or no bacon
