Made a southwest version by accident because my grocery store was out of breakfast sausage (I'm not a ham fan).
Used 1lb chorizo, 2 20oz bags southwest flavored hash browns and a combo of 8oz mild cheddar and 8 oz chipotle cheddar. Make sure to leave the chorizo grease in the pan to be soaked up by the potatoes and mix all together rather than doing layers.
I used half and half because the bottle was smaller and we tend not to go through milk fast enough to get anything bigger than a pint, which my store didn't have for whole milk.
