I couldn't find andouille sausage, so I used hot and smokey sausages from asda; I used prawns, I think shrimp is the american version of the same thing, not sure. It would be lovely with king prawns for the extra chunkiness. I had no green pepper, only red and yellow ones so that's what I used; I used some of a can of creamy chicken soup instead of broth; and not a big fan of cauliflower rice so used regular brown rice; I don't have kosher salt, so used my normal cooking salt. I altered the proportions to serve the 2 of us, and there was ample for the meal with a bit leftover for my lunchpot the next day.
