A new go-to recipe for me in 2022. On top of being delicious, they're gluten-free, dairy-free, and very low cholesterol as far as cookies go (no butter or egg yolks).
Be sure to do a very good job whipping the egg whites - if you underdo it the texture may suffer.
I recommend Disaronno for the Amaretto - it's the original brand that invented the drink and a 750ml bottle only runs about $25 (or $15 for 375ml). Not sure what to do with the extra? It's amazing by itself over ice as an after-dinner drink and it's also used in numerous cocktail and dessert recipes.
