This was great! First of all, the filling was very tasty, you can eat it by itself before frying it. It was pretty salty so you can easily cut back on the salt. We added too much water to the couscous the first time, but we refrigerated it overnight and the consistency improved. It still fell apart while eating, so dryer couscous and smaller patties would help. But it tasted great regardless! The second time we went with the couscous instructions (1:1 ratio) and it was a bit too dry. Next time we may add a little extra water. Served with a slab of onion and some lettuce and ketchup. Yum!
I’d recommend doubling the recipe if you want a substantial amount, and some leeway for eating the batter! We did, and got maybe 4 meals out of it for 2 people. For ease of instructions, I used the following quantities (for double recipe):
1 cup couscous (added to 1 cup boiling water)
1 can chickpeas
1 cup each (frozen) corn and peas
Will make again!
