I stuffed the cavity with half an onion, a smashed garlic clove, and half an orange. I also sprinkled cinnamon, ginger, garlic powder, onion powder and thyme on the chicken with the salt and pepper before roasting it. I used a 5lb chicken instead of a 3lb. I also don't have a roasting pan so after the chicken was done I took most of the pan juices and used it to cook the vegetables in a skillet. I threw the orange slices on too of the chicken and put it back in the cooling oven to keep it warm while the veggies cooked and would baste it with the pan juices every so often to keep it moist in the mean time.
