I adapted this recipe, and the base recipe was great inspiration. The tahini sauce is now a go-to (added Sriracha).
For the oven veggies, I also added bell pepper and the chopped up stalk of yesterday's broccoli. I fried up some garlic butter mushrooms and added greens. I also sautéed some red onion and carrot slices with a dash of soy sauce. Made a very filling meal.
