I reduced the thickness of the chicken breasts by slicing them in half, thickness wise, and still had ample crumbs to coat with. I also seasoned my chicken a bit with salt and pepper first instead of adding salt to the crumb mixture.
Would suggest reducing the spice in the honey sauce even more! Tasty and I like heat / spicy, but this was almost too much, and I already went with a little extra honey and the low end of the spice recommendations.
Delicious the next day, too, over a bed of greens and used a bit of the sauce as my salad dressing.
Next time for the honey sauce...
1 tablespoons hot sauce
1/2 teaspoons cayenne pepper
1/2 teaspoon chipotle chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
