Did this a little different, still just as delicious! We bought chicken tenders and got them going in a 30 minute Hawaiian smoke marinade. While it marinaded, we made a ziplock bag up of the "topping" with cut cherry tomatoes, cut avocado, a can of southwest corn, a can of black beans (rinsed), a cut jalapeno, and a cut red onion. Then we chopped the cilantro and mixed it in a bowl with the lime juice, cumin powder, added chilli powder, garlic powder, and a little bit of oil. Mixed it up, poured it in the bag and let it marinate. By then the chicken was ready to cook so we cooked the marinated chicken while the topping marinated. I bought the chips for it, but ultimately we had some leftover spring mix so we made a southwest salad out of it - a bed of salad, with the chicken on top and the "topping" on the chicken. I didn't use any dressing but the hubby used a creamy chipotle dressing. We both loved how it tasted, with or without the dressing. Def a make again!
