This was really good! I feel like it's the perfect dish to experiment with. You could replace pork with chicken, or add broccoli, bacon, whatever you wanted. We didn't have any peppers/mexicorn but the sweet corn and onion were great as is. I seasoned the pork with just some kind of BBQ seasoning but I think if I'd used something else the pork would have been more flavorful. But I was pretty surprised. I thought this might border on dry and bland, but it didn't! I wouldn't put it in a normal rotation, but for a one-off, I really liked it.
