Love this recipe! I use ground beef. Double the potatoes if you like a thick layer. For the veggies I just add around 1.5-2 cups of frozen chopped veggies near the end (carrots, peas, green beans and corn). I usually increase the amount of spice (and sometimes just add a dried Italian seasoning mix), and use 1 tablespoon of worcestershire sauce and 1 tablespoon of red wine vinegar for extra flavor. You can also increase the tomato paste for more flavor.
