Absolutely LOVED this! Super easy to adjust to whatever is on hand or needs to get used up. I didn't have kale or spinach but added bok choy, fresh corn off the cob, baby corns, and sliced carrots instead of shredded ones. I used lots of extra mushrooms as well so they didn't go bad in the fridge. Also added a squirt of Hoisin sauce, and extra bit of sesame oil (love the stuff!), and a tiny splash of Chinese 5 spice. Super easy, and super flavorful. I did let it simmer a bit longer just to really get those flavors all heavy in the broth.
