Directions:
1. Heat a large saucepan over medium heat. Add olive oil and sauté the onion for 5 min. Add the garlic and continue cooking for 2min. Add salt and pepper.
2. Add the carrots, celery, and bell pepper, and continue cooking for 5 minutes.
3. Add the cumin and chili and continue cooking for 2 minutes.
4. Add the diced tomatoes, soy meat, and vegetable broth.
5. Simmer for 25min.
6. In the meantime, cook rice as directed on the package.
7. Serve warm on its own, or over basmati rice. Squeeze the lime juice and top with cilantro.
