The spice is perfect. It tastes fresh with all the herbs. But chorizo needs to be cooked crumbled and out of casing, not sliced into rounds. Make sure to absorb the grease once chorizo is cooked.

It's Spanish chorizo... It's cured not raw like Mexican. It's definitely intended to be sliced and quartered. But Mexican chorizo cooked and crumbled is probably great too (I'm about to find out to be honest!)
