I was surprised by this.
I am not usually a fan of endive (find it too bitter and only ever boil it and then shove it in the oven covered in ham and cheese ๐)
But this is tasty!
I added double the mushrooms and used a variety of them. Unfortunately I overdid on the sugar so the whole dish was too sweet.
I don't think I left it on the stove for more than 20 minutes once the endive and potatoes were added.
This is a soup I will serve to others in the future as well.
