So, I cheat a little on the prep for this one. I use pre-shredded matchstick carrots and a bag of frozen cauliflower rice. I make sure the bag of cauliflower rice is just cauliflower and doesn't have anything added to it. After I put the meat and vegetable mixture into a glass 8x8 baking dish, I cut open the bag of frozen cauliflower rice, spread it on top and put it directly into the oven. I do use the broiler at the end. It's a different texture than the recipe but a huge time-saver for me and everyone still really likes it!
