Usually happens if you keep opening the oven door mid baking as the temperature shifts, also have you preheated the oven? :)

Or missing baking powder like I'd done more than once 😅

My mom use to tell me not to bump the oven or jump on floor nearby because it'd make what's in the oven collapse/deflate.
