Yes, I always use a square pan, make sure to cut your potatoes the same width so they are thin and not too thick. I always use a veggie slicer for scallop potatoes. You can always pop them in the oven longer as well. If you're worried about the top burning, just put a piece of foil gently over the top (not sticking to the cheese) and it will allow the potatoes to cook longer without getting too brown.
