This was beautiful! I had to modify it a little as my parents don't like the coconut taste so while I still used the coconut milk, I added extra spice. I also used ground ginger, onion powder, and garlic powder instead to make it easier on me (I'm disabled). I used more bok choi, less mushroom, and made 6 portions. I also used a Veg stock pot instead of chicken stock as cartons of stock just aren't something I keep in.
