Really liked this! Pretty hands off and tasty - I did need to add more salt at the end. If you eat cheese, feta would probably be great, or maybe olive, for more salty kick. Instructions require subscription but basically - roast the tomatoes, garlic, cilantro stems, cinnamon sticks, thyme, shallots and olive oil and salt and pepper for an hour at 350. Then sprinkle the rice on top (no stirring), pour the boiling water in and then cover tightly and cook at 450 for 25 min. Take out and let stand covered for 10 min, then stir in cilantro leaves.
