Decadent, yet delicate. Elegant and delicious. Slightly delicately crispy on the outside (just a bit) but moist on the inside. Be sure to use food gel or food coloring powder to make the rich brown color of these amazing macarons. Next time, I will use a bit less sugar than the recipe calls for, as whipping simple syrup into the egg whites to make the merengue leaves it a bit cloyingly sweet. Be sure to tap the cookie sheet several times against the counter to get rid of air bubbles in the piped batter. Be sure you pipe the batter inside the inner, smaller circumference of the silicon mat and then bake immediately. I found that my oven called for 2 minutes more for doneness. Adjust accordingly. Otherwise, an excellent recipe! My go-to holiday fave henceforth!
