I made quite a lot of substitutions and stuff, but they were still pretty tasty, smelt good too. I used only the microwave, but it did mean my carrots weren’t quite a purée. Used Aquafaba instead of egg, added extra spices (nutmeg, ginger, cloves, mixed spice), used oat flour too. Cooked them in the microwave but due to my changes they didnt rise, so I wouldn’t bother with baking powder. They weren’t very sweet but i liked it, especially good topped with a drizzle of almond butter too
