My husband and I loved this. In the slow cooker, it definitely takes the full 4 hours on high to melt the cream cheese, but it does melt. If you want to speed that up you could make this on the stove instead of a SLOW cooker & melt it with the broth, add tomatoes, then your tortellini & spinach at the end. We warmed up left overs the next day and it was still great and the pasta wasn't mushy at all, plenty of liquid remaining at end of cook time and next day. This is definitely being added as a go-to recipe for us.
