i omitted the spinach because my husband is picky. i added a bag of boiled red potatoes (boiled beforehand so pasta wouldn’t get too soft) and used 4 cups of low sodium chicken broth and 1 cup of reserved potato water bc i was short on broth. was very good and had plenty of leftovers! probably will try to use milk rather than 1/2 & 1/2 next time to save some calories. took me an hour & a half to prep and cook. next time i will chop veggies ahead of time to lower prep time. will be making again!
