This soup has that homely, familiar flavour of a wintery soup, but the extra lemon flavour gives it a bit of zing that has people asking what the secret ingredient is! A lovely blend of classic and unusual flavours. It's so easy to make too, I'll definitely come back to this one. I didn't have tomatoes or kale, so I added in a couple stalks of celery. I also replaced the leek with onion as that's what I had. I used lemon-infused rapeseed oil as the cooking oil and could certainly smell it as the onions were softening. A fab soup.
