I couldn’t count the number of times I’ve made this. An absolute fave in our household. Makes for very easy meal prep. We like to eat it on rice with veggies or in wraps with salad.
Works well on a toastie with cheese or on nachos with salsa!
I always add an extra onion because I find it strengthens the flavours and I always use a good sized blade roast, leave the fat on when adding it to the slow cooker then it pulls right off after cooking, but keeps the meat moist.
I like to use liquid beef stock but if I don’t have any chicken stock still works and is still tasty.
After shredding the meat make sure you ladle generous amounts of the liquid from the slow cooker over the meat for both flavour and moisture otherwise the meat tastes dry and flavourless.
