I made this as a meal instead of meal prep. I actually made up too much rice, so have extra, which I think is what made it bland at first, so I added some cayenne pepper, red pepper flakes, chili powder, salt, pepper, and garlic to it (I used up last packet of taco seasoning and we like the extra spicy oomph), and the flavors took very well. I would definitely recommend a taste test, or keeping an extra bit of seasonings on the side.
