Soothing & warming! Thought I had a favorite soup, but this one took its place. I doubled the ginger and it’s just what I needed. I didn’t have cous cous so I subbed with 1/2 basmati rice & 1/2 split lentils. Great combo. I gave it a squeeze of lemon at the end and an extra cup of broth. I would’ve topped it with parsley, but only had cilantro. If you need a warmup, grab a big bowl.
