- a combination of key lime and orange juice is the best
- fresh juice is preferred
- fresh, never frozen fish (Gulf Red Snapper is the best choice in Texas)
- uniform fish cubes 1/2″ for even marinating
- marinate fish NO LONGER than 30 min, refrigerated
- combine all ingredients right before serving
