I'm not a dark meat fan, so I used chicken breasts that had been marinating in low fat Italian dressing. Used red and green bell peppers, onions, carrots, garlic and baby bella's. Served over parmesan-smoked paprika polenta, with a glass of good Aglianico. I'm thinking next time (and there WILL be a next time), for a little funk, I'll use Manchego cheese in the polenta instead of parmesan.
