This was really good! It's just my partner and me, so I split it in half instead of quarters, and that portion felt just right. It was nice and soft in the morning; 90 seconds in the microwave was just right for serving.
I used a bourbon vanilla that a friend made. It added a subtle but nice depth to the flavor.
A bit too sweet for my taste. Next time would halve either the brown sugar or the maple syrup, or back them both off by a third and see what that did.
It's an easy recipe, but not necessarily easier than anything else for breakfast. I might do this as a nice treat like for the holidays, it tastes kind of Decembery.
