Glooooory be. Long live this kale and lentil combo! This salad is a weekly staple at my house (and nobody here likes kale!). It's a three-bowl/pot/pan operation, but it's a well balanced, hearty meal. And the instructions are so detailed! I'm in love.
Leave out the crushed red pepper if you don't care for it, buy pitted olives (kalamata are almost better) and use a peeler to get a wide, flat strip of any type of citrus you want. It's worth getting the French Green lentils, but the inexpensive green ones work alright if you're onnabudget. Cumin works in place of cumin seeds. And a little extra feta never hurt anybody...
