Soft as tuna salad and was very hard to work with. Tasted like a tuna salad sandwich too. There are some definite things I will change next time I make this. The patties were way too soft and turna-salad like. I think I will reduce or omit the mayo, and I will definitely omit the cellery in my next try because dh and i agreed that it was the wrong direction for something that wanted to be a burger. Next time I will try a hint of worchestershire sauce in the patties, will update.
