Heya! I noticed that too, typically when I'm air frying potatoes I do 400 degrees for about 15 minutes but you should use your discretion based on your air fryer. Mine is an InstaFryer.

I haven’t made these yet but I looked and number 4 on the instructions say
“Preheat air fryer to 375 degrees.”
I was assuming that is the temp the author wants the French fries cooked at?

I would preheat air fryer to 375 degrees and then cook for 15-20 mins depending on how crispy you like your fries, and how big the fries are cut. I find that flipping the fries halfway through cooking helps get them crispier on all sides!
