I had to mess with the instructions quite a bit to get this recipe to work for me. My grocery store doesn't have the typical american sweet potatoes I grew up with, they are huge and the skin is different and seems like it would be unpleasant to eat. I peeled my huge sweet potato and cut it into big chunks.
I felt pretty certain my onions would burn if I tried to cook them with the potatoes, so I caramelized them instead and that was a really good decision. The sweetness was divine.
I sauteed the kale for just a minute after I finished the chickpeas because I prefer that to roasted kale.
Lastly, I seasoned everything instead of only seasoning the chickpeas.
This recipe ended up being pretty messy and time consuming, but that might be because of the changes I made. Either way, my husband and I both really enjoyed it and felt great after eating it so I'll be making it again for sure.
