So sad that my shiitake mushrooms didn't make it home from the grocery store but the recipe still turned out great. I will say - splurge on good quality meat. I used top round London broil & it was super chewy. I got udon noodles from the produce department & they were super yummy. I think water chestnuts would be a fantastic addition & add a nice crunch.
