This didn't turn out how I was expecting XD it was a lot more soupy. I uncovered it after about 5 minutes hoping it would thicken up. It was tasty enough for a bean side dish and all those veggies probably make it a lot healthier, definitely tastier than a lot of the simple black bean dishes I've had before. Because of the consistency it felt a bit unnatural served solo on the side of a salmon filet like we did off the meal plan? Would feel more natural served over something, like rice as seen in the main picture, or maybe in a side bowl like when you get a cup/little bowl of ranchero beans on the side at a restaurant. Will try that next time! It was real easy to make since we did all the veggies in the food processor
