Nowadays my go-to oil for frying is avocado oil. It's close to olive oil benefits with a higher smoke point. But it may also be your pan. I've never been as good as many in getting really perfect crusts on things like this. My simple hack is using oil with a touch of butter in a nonstick pan (Butter browns better, but also may stick. But if you have a well seasoned cast iron pan or griddle, that would be ideal.
