Very good. Served with white minced onion (rinsed), cilantro, herded roasted verde and aguacate sauce from chicanoeats. Made this couple times. Usually good. This time the pineapple had too much juice after roasting and ended up ruining the texture of the chicken the the very last step. Instead of carmelizing the marinade, it boiled the chicken pieces giving it a super grainy texture. I could not eat it. To avoid in future I’d make sure the pineapple slices are super thin for roasting and/or don’t throw the pineapple chunks in until ready to eat? Delicious flavor.
