Just used what I had, so purple onions instead of spring onions, and dry herbs and stuff. Threw in some garden-grown peppers my uncle gave me and I skipped the pita bread. It went nice with some grilled whiting. Just a nice, light, airy salad. The quinoa was pretty filling. Cook and prep time is way longer than it implies though and it's a bit too impractical to be a staple dish.
