I cold smoked some muenster and mild cheddar on my pellet grill. I subbed out the colby jack for the muenster and used the smoked mild on top. Definitely went with paprika and onion powder to add some color and savory flavors.
This turned out great. Throw a little pulled pork on top, and you've got some serious comfort food.
