I didn't follow the recipe exactly. I put the vegetables in the crockpot with the chicken and mixed it all up. I also added tomatoes and kept the chipotle peppers in. I did not add any salt and I used chicken broth with no added salt.
I let it cook on low for 3.5 hours and then put it on a bed of rice with a side salad. Very, very tasty and so very easy! I think next time I will put in some black beans as well for some added fiber.
