I sprinkled about a cup of extra cheese into the bowl with the bean and corn mixture. I also sprinkled cheese on the tortilla before adding the corn mixture and onto the beans before folding tortilla over. I tried using the 2 tortilla method but preferred using one and folding over like a taco, as another commenter mentioned. Best when left to cook until browned-don't be scared.
