I do not recommend plain flour for this recipe - plain flour absorbs far less water than bread flour does so you’ll get a sloppy dough that’s tricky to handle but you also won’t be able to achieve the big air bubbles with plain flour because the protein content is lower and the dough will have less strength to hold the bubbles in. You’d get a denser, less airy focaccia. I have a whole section of notes on flour at the bottom of the recipe :)
