I didn’t have shells but I had zucchini so I decided to slice it and make a zucchini lasagna with the ricotta spinach mixture. I added a little fresh parmesan to the mix. Then, I did two layers and topped with the only cheese I had left (cheddar). While it baked I prepared some tomatoes, onions and garlic to roast for some fresh tomato sauce to top the lasagna. It was amazing and so easy to whip up!
