The instructions need to be taken with a grain of salt.
1. You cannot get a good sere on the stew meat as it lets off too much fat and water. Instead, maybe pour off the liquid once or twice retaining it, or sere in another pan prior to adding to the pot.
2. Add the celery and tomato paste in with the onions until softened. Then add the garlic until it is fragrant. Immediately add back the liquid and bring to a simmer.
3. Chop potatoes into BITE sized chunks, not just in half. Add herbs, spices, a pinch of MSG (optional), and the rest of the veggies.
4. Add enough beef stock to cover vegies and don't overfill your pressure cooker.
5. Cook time will make veggies soft, so tone it back 5-10 min for more aldente veggies. Natural release is fine.
NOTE: Herbs are subjective here. Use what you like. personally, leaving off the rosemary and just bumping up the thyme and oregano works better. I pinch of nutmeg or cardamom will brighten it up.
Finish it off with some butter or heavy cream for a richer taste , and season with salt and pepper at the very end to taste.
