My favorite gluten free bread. It's bulked up with fiber instead of starch like so many gluten free recipes. It holds together well and can even be made in a stand mixer with a dough hook like real bread (or by hand if you're into that). The plate with 2 slices is a loaf in which I used 2/3 sorghum and 1/3 teff flour. It doesn't have the nutty teff flavor and is a bit softer than an all teff loaf. I wrap it in a towel then a plastic bag to keep it from drying out in the fridge.
